At first being diagnosed with Celiac seemed like such a loss, but since I love to bake I soon began to experiment with my favorite recipes to see if I could convert them to gluten free. Now most people will tell you that they prefer my desserts to those with gluten. I guess that's why a number of world class athletes, and many other health conscious people are going gluten free.
